Details:

The derivation of ओम् as a word in Sanskrit language

ओम् is a word derived from a verbal root अव्, which means to protect, in the sense of agent of that action. Thus ओम् means “the one who protects, blesses”,  in other words, ईश्वर, ब्रह्मन्.

This is a विग्रहवाक्य, a sentence which explains a derived word:
अवति रक्षति इति ओम् । One who protects is om.

This is the definition of the verbal root अव्, found in धातुपाठः 1.684:
अवँ रक्षणगतिकान्तिप्रीतितृप्त्यवगमप्रवेशश्रवणस्वाम्यर्थयाचनक्रियेच्चादीप्त्यवाप्त्यालिङ्गनहिंसादानभागवृद्धिषु

अवँ is termed धातु by 1.3.1 भूवादयो धातवः।, since it is listed in धातुपाठ, which starts with भू and it is क्रियावाचक, असत्त्ववाचिन् (that which does not have gender or number), and अनव्यव्य.
            अँ of अवँ is an indicatory letter (इत्) by 1.3.2 उपदेशेऽजनुनासिक इत् ।, and is to be elided by 1.3.9 तस्य लोपः ।, thus only अव् is remained as धातु.

अव् (1PS) to protect, etc.

To this अव्, a suffix is added in the sense of the agent, कर्तरि by (उ०) 1.142 अवतेष्टिलोपश्च। ~ मन्. This injunction is told by a sūtra found in उणादिसूत्रपाठ, a collection of injunctions to make certain प्रातिपदिकs, nominal base.
प्रत्ययs, suffixes told in उणादिसूत्रपाठ are considered to be कृत्प्रत्यय by 3.3.1 उणादयो बहुलम् ।. When not specially mentioned, any कृत्प्रत्यय is in the sense of agent by 3.4.67 कर्तरि कृत् ।.
अव् + मन्          (उ०) 1.142 अवतेष्टिलोपश्च। ~ मन्
This sūtra says: after अव्-धातु, मन् is suffixed.
अव् + म्            (उ०) 1.142 अवतेष्टिलोपश्च। ~ मन्
There is another injunction of this sūtra. The टि-part of मन् is to be elided.
टि is defined as a part which starts from the last vowel of an entity and ends at the end of the entity by 1.1.64 अचोऽन्त्यादि टि ।. Thus, the टि-part of मन् is अन्. अन् is a subject to लोप, elision, defined by 1.1.60 अदर्शनं लोपः ।. Finally only म् remains.
By being suffixed, the धातु gains the status of अङ्ग by 1.4.13 यस्मात् प्रत्ययविधिस्तदादि प्रत्ययेऽङ्गम् ।. The meaning of the sūtra is: After which entity a प्रत्यय is enjoined, a part starting from the beginning of that entity and ending immediately before the प्रत्यय starts is called अङ्ग.
To this अङ्ग, modification is told by the next sūtra.
ऊठ् + म्                        6.4.20 ज्वरत्वरस्रिव्यविमवामुपधायाश्च । ~ अङ्गस्य ऊठ् अनुनासिके क्विझलोः क्ङिति
            The meaning of this sūtra is: After the धातु ज्वर्, त्वर्, स्रिव्, अव्, and मव्, both उपधा and व् are replaced by ऊठ् when अनुनासिक-beginning प्रत्यय, क्वि, or झलादि क्ङित्-प्रत्यय follows.
उपधा is an penultimate letter (second last letter) of an entity defined by 1.1.65 अलोऽन्त्यात् पूर्व उपधा ।.
            In this context, भाष्यकार says both उपधा अ and व् can becomes ऊठ् and they both are replaced by one by 6.1.101 अकः सवर्णे दीर्घः। ~ एकः पूर्वपरयोः, by stating “स्तां द्वाऊठौ नास्ति दोषः, सवर्णदीर्घत्वेन सिद्धम्” (6.1.68).
            The takes गुण by 7.3.86 पुगन्तलघूपधस्य च । ~ गुणः.
ओ + म्              7.3.84 सार्वधातुकार्धधातुकयोः । ~ अङ्गस्य गुणः
                        1.1.3 इको गुणवृद्धी ।, 1.1.72 येन विधिस्तदन्तस्य ।, 1.1.52 अलोऽन्त्यस्य ।
            When इक्-ending अङ्ग is followed by सार्वधातुक or आर्धधातुक प्रत्यय, the last letter of अङ्ग takes गुण.
When गुण is heard in an injunction, a sixth case ending word “इकः” is to be added by 1.1.3 इको गुणवृद्धी ।. इकः and अङ्गस्य are to be understood as इगन्त-अङ्ग by 1.1.72 येन विधिस्तदन्तस्य ।. 1.1.52 अलोऽन्त्यस्य । tells that the last letter is to be modified unless a letter is specified.
The suffix मन् is considered to be आर्धधातुक as it is suffixed after धातु, and it is neither शित् or तिङ्. This is told by 3.4.113 तिङ्-शित् सार्वधातुकम् । and  3.4.114 आर्धधातुकं शेषः।
            Being ending with कृत्-प्रत्यय, ओम् is a कृदन्त and termed प्रातिपदिक by 1.2.46 कृत्तद्धितसमासाश्च ।.
            Being म्-ending कृदन्त, ओम् is termed अव्यय by 1.1.39 कृन्मेजन्तः ।
            Being प्रातिपदिक, सुप् is to be suffixed by 4.1.2 स्वौजसमौट्छस्टाभ्याम्भिस्ङेभ्याम्भ्यस्ङसिभ्याम्भ्यस्ङसोसाम्ङ्योस्सुप् । ~ ङ्याप्प्रातिपदिकात्. The सुप्-प्रत्यय after अव्यय is to be elided by 2.4.82 अव्ययादाप्सुपः। ~ लुक्.
